There are two things I can think of.
First is the ski getting water. I believe the 750ss pumps the water in
from the front of the jet pump. This can get clogged with sand if you
beach the ski, or start the ski in shallow water.
If you have good water flow, then it may be that your engine is running
lean. When a engine runs lean it runs hot. A lean running engine can be
caused by a poorly adjusted carborator, or an air leak at the base of
the carb, or the engine to manifold.
Good luck,
Larry
